Cuscuz Paulista da Vovó

Grandma's Cuscuz Paulista

🇧🇷✨ Episode 40 of Prova e Me Conta: Karen's Cuscuz Paulista

Karen shared with us the traditional Cuscuz Paulista, a family recipe kept in a notebook that's been passed down from generation to generation. 📖❤️

Full of flavor, history, and love, this recipe brings the family together around the table. It's practical, quick to make, and simply delicious!

Ingredients

Instructions

  1. Heat the pan with olive oil over high heat and sauté the chopped onion.
  2. Once the onion starts to soften, add the bell pepper and the Knorr bouillon cube.
  3. Let it cook without boiling too much, so it doesn't wilt too much.
  4. Add half of the sardines (save the more whole pieces for garnish), the corn, and the peas.
  5. Add the tomato sauce and water (same measure as the sauce).
  6. Once it comes to a boil, lower the heat and add the corn couscous flour little by little, stirring constantly to avoid lumps — no need to hydrate it beforehand.
  7. Keep stirring until it pulls away from the bottom of the pan (the texture should be similar to brigadeiro).
  8. Grease the mold and decorate with the reserved sardines, boiled eggs, hearts of palm, and olives.
  9. Fill with the mixture, pressing firmly to shape it.
  10. Let it rest for about 10 minutes before unmolding.
  11. Unmold onto a plate, slice like a cake, and enjoy!

Tip:

This recipe is very adaptable — swap the red bell pepper for yellow, use or skip the hearts of palm, and artificial seasoning can be replaced with more natural options, according to your preference.
