One-Pot Codfish: Easy and Flavorful Recipe

Ingredients:

  • 🐟 Desalted codfish pieces
  • 🧅 1–2 large onions, sliced
  • 🫑 1 green bell pepper, sliced
  • 🫑 1 red bell pepper, sliced
  • 🍅 2–3 tomatoes, sliced
  • 🥔 3–4 potatoes, thinly sliced
  • 🧄 3–4 garlic cloves, chopped
  • 🫒 Olive oil (be generous!)
  • 🌿 Parsley to taste
  • 🥚 Boiled eggs

Instructions:

1. Start by desalting the codfish by soaking it in water and changing the water several times over 24 hours. 💧

2. In a large pot (heat off), start layering with onions.

3. Add bell peppers, tomatoes, and a layer of codfish.

4. Drizzle generously with olive oil and add chopped garlic. 🫒

5. Repeat layers with onions, peppers, tomatoes, codfish, and thinly sliced potatoes.

6. Continue layering until all ingredients are used, always adding olive oil between layers.

7. Cover the pot and then turn on low heat. 🔥

8. Cook without stirring — just gently shake the pot occasionally.

9. Once the potatoes are tender, the dish is ready. ✔️

10. Add boiled eggs in the final minutes. 🥚

11. Finish with parsley and adjust salt if needed.
