🇺🇸✨ Lara's Tapioca Cheese Bites (Ep. 41)
This week, little Lara made a Brazilian classic that wins everyone over: dadinho de tapioca (tapioca cheese bites). ❤️
A simple, practical recipe that's perfect for any occasion. Crispy on the outside, soft on the inside, and made in the air fryer, these bites disappear fast!
Ingredients
- 🌾 500g (about 1.1 lb) granulated tapioca
- 🥛 1 liter (about 4 cups) milk
- 🧀 500g (about 1.1 lb) queijo coalho (Brazilian grilling cheese)
- 🧂 1 teaspoon salt
Instructions
- Bring the milk to a boil in a pot.
- As soon as it boils, turn off the heat and let it cool slightly.
- Add the granulated tapioca little by little, stirring well so it hydrates.
- Stir in the salt and the shredded (or chopped) queijo coalho, mixing until it forms a creamy mixture and the cheese is fully melted.
- Line a baking dish with plastic wrap — it makes unmolding much easier — and pour in the mixture, spreading it evenly.
- Refrigerate for at least 2 hours, until fully set.
- Unmold, cut into slices, then cut into small cubes.
- Air fry at 200°C (390°F), checking every 5 minutes, until golden brown on the outside.
- Serve piping hot, on their own or with pepper jelly.
Tip:
This recipe makes a big batch! Freeze the raw cubes for up to 4 months and go straight from the freezer to the air fryer (or the pan, if you prefer frying) whenever the craving hits.
