Corn Cake with Cheese and Guava Paste 🌽 (Ep. 45)

Ingredients
- 🥚 3 eggs
- 🌽 2 cans corn (drained)
- 🥛 1 can milk
- 🌾 1 can fine cornmeal or flaked corn flour (the flaked version makes the cake crunchier)
- 🍬 1 can sugar
- 1 can vegetable oil
- 🧂 1 pinch salt
- 🥄 1 tablespoon baking powder
- 🧀 Canastra cheese and guava paste (goiabada), to taste
Instructions
- In a blender, combine the 3 eggs with the 2 cans of corn (drained), 1 can of milk, 1 can of cornmeal or flaked corn flour, 1 can of sugar, and 1 can of oil — use the empty corn can itself to measure the rest of the ingredients.
- Add a pinch of salt, which brings out the sweetness, and the baking powder last, blending just enough to combine — don't overmix.
- Grease a baking pan and pour in the batter — it will be quite runny, which is normal since the recipe uses no wheat flour.
- Scatter pieces of Canastra cheese and guava paste on top, letting them sink slightly into the batter.
- Bake in a preheated oven at 180°C (350°F) for 30 to 35 minutes, until golden.
- Let it cool slightly before serving — it's even better with the melted cheese and guava paste forming layers inside the cake.
Tip:
Use the empty corn can to measure all the other ingredients — you'll barely dirty any extra dishes.
