Casa Valduga Sur Lie is a sparkling wine in its most raw form, without disgorgement and consequently, without post-disgorgement dosage of expedition liqueur.
Because it doesn't undergo this aging process, yeast autolysis occurs while the bottle remains closed. This is the key difference with this wine: it continues aging indefinitely, and the decision to interrupt this process is solely yours, as you decide how long the wine will mature, allowing you to enjoy it to your liking.

- Minimum maturation of 30 months in the cellar + evolution until opening the bottle

WINEMAKING
Preparation using the Traditional Method
Preparation of the base wine
- Final selection of bunches;
- Discontinuous and delicate direct pressing in an inert atmosphere;
- Static cleaning of the must;
- Fermented by selected yeasts Saccharomyces cerevisiae;
- Alcoholic fermentation at a temperature between 15º and 16ºC;
- Preservation of base wine on fine lees with batonnage;
- Blend: 10% of wines aged in low-toasted French oak barrels for 10 months.
- Cold tartaric stabilization for one week at -5°C;
- Filtration;
Foam socket
- Addition of tirage liquor with inoculum of selected yeasts Saccharomyces cerevisiae esp. bayanus;
- Packaging;
- Second fermentation inside the bottle itself at a temperature of 12ºC for 45 days;
- Maturation for 30 months “sur lie” with yeast autolysis - average cellar temperature of 16°C;
Sensory
Visual: Straw yellow color with a characteristic cloudy appearance.
Olfactory: Aroma of great complexity and elegance, with a balance between notes of almonds, acquired during the 30 months of maturation, and notes of fresh tropical fruits.
Palate: Perfectly balanced. A very good balance between the freshness from the acidity and the creaminess. The finish is very fine, revealing delicate nuances of almonds, derived from the sparkling wine's development.
